Peanut Fudge

Love fudge! The only problem with it is that it’s dangerously good and by making it, you’re taking a serious risk to eat the whole batch at once. I’ve seen it with my own eyes!

But if you are ready to take it, here is a recipe for you

125 ml maple syrup
100 ml peanut butter
60 ml coconut oil
50g peanuts

Melt coconut oil
Mix well all the ingredient
Line a form ~15cm x 15cm with parchment paper
Press the mixture evenly into the form
Put to freezer for at least 2 hours
Cut into squares and enjoy

And as I am a nutrition nerd, I cannot help sharing some useful facts too:
Peanuts are a great source on plant based proteins
Peanuts are rich in antioxidants, biotin, copper, niacin, folate, manganese, vitamin E, thiamin, phosphorus, and magnesium

If stored under warm and humid conditions, peanuts can be contaminated with aflatoxin, which is very dangerous for our liver. So please, store them right and make sure to throw away those that start looking suspicious

I would highly recommend to soak peanuts before using (like all other nuts and legumes) to get rid of antinutrients
