Raspberry Coconut Chocolate Bonbons

Ingredient for the filling:
⠀⠀⠀⠀⠀
1 cup desiccated coconut ⠀⠀
1 tbsp melted coconut oil ⠀⠀⠀
15g freeze-dried raspberries* ⠀
2 tbsp maple syrup ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ ⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients for the coating:
⠀⠀⠀
100g vegan chocolate
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀
Method:
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ ⠀⠀⠀⠀⠀
1. Process all the filling ingredients until well combined. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀ ⠀⠀⠀⠀⠀
2. Press the mixture into half-spherical moulds(or any other shape you have at home). Put in a freezer for 1-2 hours to set.
3. Coat in chocolate, preferably tempered.
4. Let them set in a fridge.

NOTE: If you have the patience to temper the chocolate, the bonbons can be stored in room temperature for 5-7 days in an airtight container. ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀
If the chocolate isn’t tempered – store them in a fridge for a week.

*Flavor Tip: Instead of freeze-dried raspberry you can take a handful of fresh mint leaves to make a mint filling.
