Apple Strawberry Tarts with Elderflower

INGREDIENTS:

Proportions for 4 mini tarts or 1 proper tart ⠀

Crust: ⠀
※100 ml oats ⠀
※100 ml almonds ⠀
※50 ml raw buckwheat ⠀
※Juice and zest of half a lemon ⠀
※2 tbsp coconut sugar ⠀
※1 tbsp coconut oil

Caramel: ⠀
※3 tbsp of salted caramel ( Salted Caramel - recipe published earlier on my blog)

Topping: ⠀
※1/2 apple ⠀
※A handful of strawberries ⠀
※Pinch of cardamom ⠀
※Elderflower for garnish

METHOD:

1. Soak buckwheat for 20 minutes, then rinse well. ⠀
2. Combine oats and almonds in a food processor and pulse until they are broken down. Add the rest of the ingredients and let the processor run until the crust dough is formed. ⠀
3. Press the dough into forms and move to the freezer for about 1 hour. ⠀
4. Remove tarts from form(s) and add the cooled-down salted caramel. I recommend preparing the caramel ahead of time to be sure it is not hot when you add it to the crust. ⠀
5. Top with chopped apples and strawberries. Dust some cardamom and garnish with elderflower.
