White Chocolate Souffle Mini Bars

INGREDIENTS:

※150g cashews (soaked for 4-6 hours) ⠀
※200ml coconut cream or full-fat coconut milk* ⠀
※100ml water* ⠀
※60ml maple syrup or any other liquid sweetener ⠀
※1 tsp lemon juice ⠀
※Pinch of vanilla powder ⠀
※2 tbsp cacao butter, melted ⠀
※2 tsp agar agar powder ⠀
※Dark vegan chocolate for coating

*Can take almond milk or any other low-fat milk instead of coconut & water

METHOD:

1. Rinse and drain the cashews. ⠀
2. Add everything but the chocolate, water and agar agar into a blender and process until smooth. ⠀
3. Mix agar agar with water, bring the mixture to a boil and whisk for a couple of minutes.
4. Add the agar agar mixture to the cream and blend until well combined. ⠀
5. Pour into a square form and let set for 30-60 minutes in a fridge. Take out and cut into small squares. ⠀
6. Melt chocolate on double bath and enrobe each soufflé. Let set and voila! ⠀

Store in a fridge in an airtight for 7-10 days.
