Persimmon Citrus Tart

INGREDIENTS:

Crust:
※250 ml oats ⠀
※250 ml walnuts ⠀
※6 dates, pitted and soaked for 10-15 minutes ⠀
※50 ml coconut sugar ⠀
※2 tbsp melted coconut oil ⠀
※1 tsp cinnamon ⠀
※Zest of 1 orange ⠀
※Pinch of salt ⠀

Filling: ⠀
※150 ml cashew butter ⠀
※10 dates, pitted and soaked for 10-15 minutes ⠀
※Juice of 1 lemon ⠀
※Juice of 1 orange ⠀
※Zest of 1 lemon ⠀
※5 tbsp melted coconut oil ⠀

Decoration: ⠀
※1-2 persimmons ⠀

METHOD: ⠀
1. Pulse all the dry ingredients for the crust in a food processor until well broken down. ⠀
2. With the food processor still running, add dates and coconut oil. The dough should form a ball that should not stick to your fingers or crumble. ⠀
3. Press the crust into your tart form, that you previously lined with plastic film (optional) and move to the fridge. ⠀
4. While the crust is setting, blend all the filling ingredients until smooth. Pour the filling on top of the tart crust, move to the freezer to set for about 40-60 minutes. ⠀
5. Cut the persimmon into thin disks and then in half. Decorate the tart as seen in the photo, starting from the outer edge working your way in.⠀
