Protein Peanut Butter Cookies

INGREDIENTS:

※3-5 dates pitted and soaked for 10-15 minutes ⠀
※2 tbsp water ⠀
※1/2 banana ⠀
※100g peanut butter ⠀
※1/2 cup (125 ml) almond flour ⠀
※1/2 cup (125 ml) oat flour ⠀
※2 tbsp Maca powder (or lucuma, or mesquite) ⠀
※1 tbsp green banana flour from @dhownaturefoods
※1 tbsp oat protein powder⠀
※Pinch of salt ⠀
※100g vegan dark chocolate (optional)

METHOD:
1. Mash with a fork or process dates, water, and banana into a paste. Then add peanut butter and mix well. ⠀
2. In a bowl mix all the dry ingredients.⠀
3. Combine dry and wet ingredients; the dough should be able to form a ball. ⠀
4. Roll cookies and dip them into melted chocolate (preferably tempered).
