Say hello:

Vegan Pavlova

For merengue:
100g Aqua Faba
1/8 tsp salt
1/4 tsp guar gum (optional, makes merengue more stable)
1/8 tsp cream of tartar or 1 tsp lemon juice
100g raw sugar (I used muscovado)

Frosting and decoration:
100-150 ml any plant based cream for whipping

1.Pre-heat the oven to 90 degrees
2.Combine Aqua Faba, guar gum, salt and cream of tartar in a large bowl, whisk until combined
3.Start whipping on a low speed until it gets all bubbly
4.Increase the speed and whip until you get stiff peaks
5.With whip still on, start adding sugar spoon by spoon. IMPORTANT: Add the next only when previous sugar is completely dissolved. Take your time
6.Line baking sheet with parchment paper. Using a spoon or a piping bag, form round pavlovas. Size it up to you, I made mine 7-8 cm
Dry in the oven for a few hours, until merengues are crispy. Time depends on size and humidity (for some reason, drying mine took forever this time)
Decorate with plant based whipped cream and berries
