Chocolate Truffles

Having a hungry newborn in one hand, it’s hard to experiment with anything more complicated than chocolate truffles. Easy, delicious and.. well.. safe! Cuz what can possibly go wrong with chocolate covered in more chocolate.

You’ll need:
40g dates
100ml coffee or almond milk
50g GF oats
50g pumpkin or sunflower seeds
Zest of 1 lemon and 1 orange
100g melted dark chocolate

More chocolate and cacao powder for coating

Process GF oats, zest, seeds until broken down
Add dates, coffee and chocolate. Process until well combined. The dough should be sticky enough to roll the truffle but not too sticky to stay on your fingers. You might need more coffee or more seeds depending on texture
Roll the truffles
Melt chocolate
Using a fork coat truffles in chocolate. Let chocolate run off a little, then roll it in cacao powder
Let them set in a fridge for about half an hour and enjoy!
