Black bean sweet potato brownies

The person who came up with using veggies and legumes in sweets is a genius!

Because:


a) sweets have never been healthier

b) it has never been easier to consume veggies


I’ve been a bit skeptical in the beginning, but the best thing it - you can hardly feel the veggie-ish taste. Especially when it’s covered with chocolate


So here is...


BLACK BEAN SWEET POTATO BROWNIES
40 minutes, about 20 pieces

Base:

~450g black beans, cooked and drained

2 ripe bananas

1/2 cup (125ml) of each: desiccated coconut, almonds (or nuts of choice), sunflower seeds, cacao nibs

1 tsp of cinnamon
4 tbsp of melted coconut oil

sweetener to taste (depends on your preferences and ripeness of bananas
pinch of salt

Frosting
1 sweet potato (cooked) or 2 avocados

100g melted dark chocolate
Liquid sweetener to taste


TO DO:

Mix brand and banana in a food processor (or by fork) until well combined

Mix in the rest of the ingredients

Spread on a baking sheet (I used 20x30 cm form)

Bake for 20 minutes/180 degrees

Meanwhile melt chocolate in a double bath

Mix with sweet potato and sweetener in a food processor until will combined

Take out the base and let it cool

Spread the frosting and let it set in a fridge for about half an hour
