Almond Cookies

I love cookies! Who doesn’t? I do mostly specialize on cakes, but having one every day, though tempting, is sometimes too much

Plus my family looooooves snacking and since I care what goes into my loved ones, I have to make sure he has a sweet stash

Gluten Free Cookies

Know what I’m talking about? Then this recipe is for you

60g rice flour (or oatmeal flour for raw version)
60g almond flour
25g sunflower seeds
20g almond butter
1/2 tsp baking powder  !don’t use it if you’re making RAW version, cookies will be less fluffy but more nutritiously dense!
2 tbsp coconut sugar
1 tbsp maple syrup
3 tbsp melted coconut oil
1 tbsp almond milk
Pinch of salt
Pinch of cinnamon
Almond or any other nut for decoration

TO DO:
Mix all dry ingredients
Add wet ones
Form cookies. Mine are about 2 cm, but you can choose whatever size works for you
For RAW version - dehydrate at 45 degrees for about 12 hours or until dry
For non-raw version - bake for 10-15 minutes at 180 degrees
Store in an airtight container for about a week. But honestly, it’s a guess, mine have been disappearing was faster than that
